Tortellini Salad With Sun Dried Tomatoes Recipe

Ingredients

  • 1/3 c. Oil packed sun-dry tomatoes, liquid removed, minced
  • 1 Tbsp. Oil reserved from the tomatoes
  • 1/3 c. Extra virgin olive oil
  • 1 Tbsp. Lemon juice
  • 2 x Cloves garlic, chopped
  • 1 jar (6 ounce) marinated artichoke, hearts, liquid removed
  • 1/4 lb Cashews, toasted
  • 1 lb Tortellini, cooked
  •     Salt and freshly grnd pepper to taste
  •     Parmesan or possibly Romano Cheese (optional)

  5. 1. Combine 1 tbsp of the liquid reserved from tomatoes, oil, lemon juice and garlic in large bowl.
  6. 2. Stir in the tomatoes, artichoke hearts and cashews. Add in tortellini and toss thoroughly. Season with salt and pepper.
  7. 3. Toss well, cover with plastic wrap, and chill for 2-3 hrs. Serve with hot bread for a great lunch. You can also pass around fresh, grated Parmesan or possibly Romano cheese.
