Ingredients
- 4 med. tomatoes, thinly sliced
- 2 med. red/yellow onions, sliced
- 2 tbsp. vegetable oil
- 1 teaspoon wine vinegar
- 1/2 teaspoon sugar
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Parsley, minced
Directions
- Arrange tomatoes and onions on serving dish, overlapping slices; combine oil, vinegar, sugar, oregano, salt and pepper. Stir thoroughly to blend, sprinkle over tomatoes. Cover and chill till serving time. Serves 8.
