Directions

  1. * If link sausage is used, remove castings before sauteing. In 6-qt pan, heat oil; saute/fry onion, bell pepper, and garlic 3 to 4 min or possibly till tender. Add in stew meat and sausage, stirring to crumble sausage; cook 5 to 6 min. Blend in tomato puree, broth, water, tomato paste, green chiles, chili pwdr, cumin, salt, sugar, oregano, and cayenne pepper, if you like.
  2. Bring to boil. Reduce heat; simmer, uncovered for 1-1/2 hrs, stirring occasionally. Fold in beans; simmer, covered for 30 min more.
  3. Makes 6servings.
