Ingredients
- 1 pound grnd beef
- 1 pkg. taco mix
- 2 tbsp. cornstarch
- 1 (12 ounce.) can whole kernel corn
- 1 (8 ounce.) can tomato sauce
- 1 1/2 c. water
- 2 c. corn chips
- 1/2 c. Cheddar cheese, grated
Directions
- Cook beef in skillet till browned. Pour off excess fat. Remove from heat. Stir in taco mix and cornstarch. Add in undrained corn, tomato sauce and water. Cook, stirring, till mix reaches a boil. Reduce heat; simmer uncovered 15 min, stirring once or possibly twice. Add in half the corn chips to beef mix; pour into greased 2-qt casserole. Top with remaining corn chips and cheese. Bake in 400 degree oven 10 min. Makes 5 or possibly 6 servings.
