Being the lunch-hater that I am (just making it, I really like eating lunch. I wish restaurant food were free and always healthy and that it either came to my house automatically or I could go sans toddler), my default go-to lunch at home has become an open-faced egg salad sandwich like Sara shared not too long ago on the OBB Fit Club Instagram account. Which brings me to kind of a funny/embarrassing story about middle school romance and that time our middle school went skiing and I asked my friend to ask my 8th grade “boyfriend” (because in 8th grade, all communication took place via friends and notes in lockers) what his favorite sandwich was so I could lure him into the woods with a romantic picnic lunch. ,%20my%20default%20go-to%20lunch%20at%20home%20has%20become%20an%20open-faced%20egg%20salad%20sandwich%20like%20Sara%20shared%20not%20too%20long%20ago%20on%20the%20OBB%20Fit%20Club%20Instagram%20account.%20Which%20brings%20me%20to%20kind%20of%20a%20funny/embarrassing%20story%20about%20middle%20school%20romance%20and%20that%20time%20our%20middle%20school%20went%20skiing%20and%20I%20asked%20my%20friend%20to%20ask%20my%208th%20grade%20%E2%80%9Cboyfriend%E2%80%9D%20(because%20in%208th%20grade,%20all%20communication%20took%20place%20via%20friends%20and%20notes%20in%20lockers)%20what%20his%20favorite%20sandwich%20was%20so%20I%20could%20lure%20him%20into%20the%20woods%20with%20a%20romantic%20picnic%20lunch.%20Turns%20out%20he%20didn%E2%80%99t%20actually%20love%20egg%20salad,%20he%20was%20just%20saying%20that%20to%20be%20funny,%20and%20that%20having%20never%20actually%20talked%20in%20real%20life%20led%20to%20a%20really%20awkward%20egg%20salad%20snow%20picnic.%20I%E2%80%99m%20so%20glad%20social%20media%20didn%E2%80%99t%20exist%20in%201995.%3C/p%3E%3Cp%3EAnyway.%3C/p%3E%3Cp%3EIf%20it%20gets%20to%20be%20lunchtime%20and%20I%20don%E2%80%99t%20have%20eggs%20boiled,%20I%E2%80%99ll%20resort%20to%20eating%20pieces%20of%20cut%20up%20ham%20and%20a%20GoGo%20Squeeze%20because%20when%20all%20else%20fails,%20eat%20like%20a%202-year-old.%20So%20I%20like%20to%20have%20about%206%20handy.%3C/p%3E%3Cp%3EThe%20problem%20is,%20I%E2%80%99m%20terrible%20at%20boiling%20eggs.%20Sara%20has%20this%20fantastic%20tutorial%20on%20how%20to%20boil%20the%20perfect%20egg,%20every%20time.%20And%20if%20you%20follow%20the%20instructions,%20yes,%20they%E2%80%99ll%20be%20perfect.%20Every%20time.%20My%20problem%20is%20that%20I%20get%20distracted%20while%20the%20water%20is%20coming%20to%20a%20boil,%20so%20by%20the%20time%20the%20water%20is%20boiling,%20I%E2%80%99m%20not%20sure%20how%20long%20it%E2%80%99s%20been,%20and%20then%20I%20always%20forget%20about%20them%20again%20when%20the%2020%20minutes%20is%20up,%20so%20I%20always%20end%20up%20with%20overcooked%20eggs%20because%20I%20can%E2%80%99t%20pay%20attention%20long%20enough%20to%20get%20my%20eggs%20right.%3C/p%3E%3Cp%3ESo%20when%20I%20started%20hearing%20about%20baking%20eggs%20in%20the%20oven%20instead%20of%20boiling,%20I%20was%20intrigued.%20And%20I%20tried%20it.%20And%20they%20were%20indeed%20perfect.%20And%20they%20peel%20like%20a%20dream.%20Don%E2%80%99t%20be%20scared%20by%20the%20fact%20that%20when%20you%20peel%20them,%20the%20shells%20smell%20vaguely%20of%20burnt%20hair%E2%80%A6no%20one%20ever%20accused%20hard-boiled%20eggs%20of%20smelling%20like%20a%20dream,%20this%20is%20just%20a%20new%20unpleasant%20smell,%20and%20the%20eggs%20themselves%20taste%20fantastic.%3C/p%3E%3Cp%3EYou%E2%80%99re%20going%20to%20need%20muffin%20tins%20and%20some%20eggs%20(really,%20as%20many%20as%20you%20want%20and%20as%20many%20muffin%20tins%20you%20can%20fit%20on%20a%20single%20rack%20in%20your%20oven).%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees%20F%20and%20place%20the%20oven%20rack%20in%20the%20center.%20Place%20an%20egg%20in%20each%20well%20of%20the%20muffin%20tin.%3C/p%3E%3Cp%3EWhen%20the%20oven%20is%20heated,%20place%20the%20muffin%20tin%20(or%20tins%E2%80%93you%20can%20make%20as%20many%20as%20you%20can%20fit%20in%20your%20oven)%20into%20the%20oven%20and%20bake%20for%2030%20minutes.%3C/p%3E%3Cp%3EWhen%20the%20eggs%20have%20about%205%20minutes%20remaining,%20fill%20a%20bowl%20with%20ice%20water.%3C/p%3E%3Cp%3EWhen%20the%20eggs%20have%20baked%20for%2030%20minutes,%20remove%20from%20the%20oven%20and%20carefully%20transfer%20each%20egg%20to%20the%20bowl%20of%20ice%20water%20and%20allow%20to%20chill%20for%2010-15%20minutes.%20Store%20the%20eggs%20in%20their%20shells%20until%20you%E2%80%99re%20ready%20to%20eat%20them.%3C/p%3E%3Cp%3EThat%20shell%20slipped%20off%20like%20a%20dream.%20A%20hard-boiled,%20sulfur-scented%20dream.%3C/p%3E%3Cp%3EAnd%20look%20at%20that%20buttery-yellow%20yolk.%20Perfection.%3C/p%3E%3Cp%3EOven%20Baked%20Hard%20Boiled%20Eggs%202016-02-23%2001:21:41%20If%20you%20have%20a%20hard%20time%20getting%20your%20hard-boiled%20eggs%20to%20turn%20out%20right,%20these%20oven%20baked%20hard%20boiled%20eggs%20will%20turn%20out%20perfectly%20every%20time!%20%20%20Eggs%20(purchased%20about%201%20week%20ago%20or%20longer)%20Muffin%20Tin%20%20%20Preheat%20oven%20to%20325%20degrees%20F%20and%20place%20the%20oven%20rack%20in%20the%20center.%20Place%20an%20egg%20in%20each%20well%20of%20the%20muffin%20tin.%20When%20the%20oven%20is%20heated,%20place%20the%20muffin%20tin%20(or%20tins--you%20can%20make%20as%20many%20as%20you%20can%20fit%20in%20your%20oven)%20into%20the%20oven%20and%20bake%20for%2030%20minutes.%20When%20the%20eggs%20have%20about%205%20minutes%20remaining,%20fill%20a%20bowl%20with%20ice%20water.%20When%20the%20eggs%20have%20baked%20for%2030%20minutes,%20remove%20from%20the%20oven%20and%20carefully%20transfer%20each%20egg%20to%20the%20bowl%20of%20ice%20water%20and%20allow%20to%20chill%20for%2010-15%20minu
