  • 6 McIntosh apples
  • 1/2 lemon
  • 4 tablespoons butter, softened
  • 1 cup muesli cereal with dried fruit
  • 2 tablespoons dark brown sugar
  • 1/4 cup chopped walnuts
  • 1 tablespoon orange zest
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 pint French vanilla ice cream

Directions

  1. Pre-heat the oven to 425°F. Trim the top 1/4–1/2-inch off the apple and scoop out the center and seeds of each apple. Wipe the edges of the trimmed apple with the lemon to prevent discoloring. In a mixing bowl, combine the butter, cereal, brown sugar, nuts, orange zest, ginger and cinnamon. Fill the apples with the mixture.
  2. Set the apples upright in a medium casserole dish and bake for 20 minutes, until tender and bubbly. Place each apple in a serving dish, top with ice cream and serve hot.
