  • 1/4 c. Raisins
  • 1/4 c. Pine nuts Zest of 2 oranges
  • 1 1/2 c. Lowfat milk
  • 6 x Egg yolks
  • 2 x Large eggs
  • 8 x Macintosh apples peeled, and in acidulated water
  • 3 c. Red Rioja wine
  • 3 c. Sugar

Directions

  1. Preheat oven to 375 degrees.
  2. In a mixing bowl, stir together raisins, pine nuts, orange zest, lowfat milk, egg yolks and egg till well blended.
  3. Partially core apples to leave bottom for filling and place in a roasting pan just large sufficient to hold them. Pour wine into pan and pour sugar over apples into pan. Fill core holes with custard mix and place in oven. Cook 40 min, or possibly till apples are tender. Remove pan from oven, carefully remove apples from pan and pour syrup into small pitcher. Serve hot or possibly at room temperature with syrup on the side.
  4. This recipe yields 8 servings as a dessert.
