Spinach is beautifully delicious on rice if prepared properly. It's healthy and goes well with rice. Remember, Proteins are essential! :-)
Ingredients
- 20 oz fresh spinach
- 1 Pound of beef
- 1 medium clove, garlic
- 2 tbsp crushed dried basil
- Half cup of chicken stock
- Red Bell Pepper - chopped
- Chilli to your taste
- 4 tbsp groundnut oil
- 2 tbsp soy sauce
- A pinch of salt
- ½ cube maggi/knorr chicken
Directions
- Shred pre-washed vegetable and set aside
- Cut already seasoned and boiled beef into large cubes
- Pour Groundnut oil into fry-pan and add beef, garlic (crushed), and bell pepper
- Fry for 2 minutes or till beef is slightly browned
- Add soy, chilli and chicken stock
- Let simmer until oil almost absorbs liquid
- Add Spinach and knorr making sure to toss continuously with a wooden spoon fot 2minutes
- Serve on rice!
