This is basically rice in red capsicum (or bell pepper) and tomato sauce. Lots of onions, thyme and curry. Cooked right, it's simply delicious!
Ingredients
- Rice- 4 cups
- Water 2 pints
- Vegetable oil (Preferably sunflower oil)
- Onions- 2 medium (some diced and some sliced in rings)
- Beef Stock - 2 cups
- Curry Powder (to your taste)
- DrieThyme
- Red Capsicum 6 large
- Chilli Powder (to taste)
- 1 Bay leaf
- Salt - (to taste)
Directions
- Boil water
- Blend diced onions, tomatoes and bell pepper together
- pour into boiling water
- Add oil to the mixture
- Add on the beef stock and chilli powder
- Add the rice and let boil for 15 Minutes
- Next theBay leaf, Curry, Dried thyme and salt
- Simmer for about 20 minutes or until the liquid's dried and the rice, soft
- Sprinkle some onion rings 5 minutes before the meal is cooked
- Garnish with remaining onion rings
- Serve with Chicken-Spinach Stir-fry (next recipe)
