Ingredients: 2 large eggs; 3/4 c. lowfat milk; 1/2 c. oil; 1 (#2 size) can cream style corn; 1/2 teaspoon baking soda; 1 c. cornmeal; 1 teaspoon salt; 1 (4 ounce) can green chilies, minced; 2 T sugar; 1 med. onion, grated; 1 sm. jar pimento, minced; 3/4 c. grated cheddar cheese; 3/4 c. grated cheese

Ingredients

2 large eggs
3/4 c. lowfat milk
1/2 c. oil
1 (#2 size) can cream style corn
1/2 teaspoon baking soda
1 c. cornmeal
1 teaspoon salt
1 (4 ounce) can green chilies, minced
2 T sugar
1 med. onion, grated
1 sm. jar pimento, minced
3/4 c. grated cheddar cheese
3/4 c. grated cheese

Directions

Mix all ingredients except second cheese. Pour into greased casserole dish. Top with second 3/4 cup cheese. Bake at 325 degrees for 45 min. (Don't overcook.) Serves 8 to 10 people. Double recipe fills 9 x 13 inch pan.
