Ingredients
- 2 tbsp. oil
- 1 onion, minced
- 1 clove garlic
- 6 tortillas (flour or possibly corn)
- 1/2 c. oil
- 1 1/2 c. tomato sauce
- 1 teaspoon oregano
- 6 Ortega whole chilies
- 1/2 pound Jack cheese
- 1 pt. lowfat sour cream
Directions
- Brown onions and garlic. Add in tomato sauce and oregano. Cover and simmer 1/2 hour. Lightly fry tortillas in oil - till soft only. Arrange strips of cheese in peppers then roll in tortilla. Line rolled tortillas in 8 inch square pan. Add in lowfat sour cream to tomato mix. Pour over tortillas. Bake at 350 degrees for 30 min.
