Ingredients
- 1/2 lb rigatoni, or possibly other short pasta (ziti is nice with this)
- 2 Tbsp. oil
- 1 x onion, minced
- 3 clv garlic, minced
- 2 x tomato, minced
- 1 x spicy Italian sausage, minced
- 1 x red pepper, minced
- 1/2 c. red wine
- 8 x prawn, raw, peeled or possibly 2 x 7 ounce tins shrimp, liquid removed
- Â Â salt
- Â Â pepper
- 1 handf parsley
Directions
- Put the pasta on to cook.
- Heat a saucepan over medium-high heat, add in the oil, then add in the sausages and cook for 2 min.
- Add in the minced onion and garlic to it. Cook for 2-3 min, till the onion starts to change colour.
- Add in the tomatoes, and cook for a further 3 min.
- Add in the minced pepper to the saucepan, cook it for 2 min, then add in the wine. Reduce the heat to low, cover and let the mix simmer for about 15 min.
- Stir the prawns into the sausage mix and cook for 2 min, or possibly till the prawns just turn pink.
- Drain the pasta. Season the sauce with salt and pepper and serve over the liquid removed pasta, sprinkled with parsley.
