Directions

  1. Preheat over 350 degrees.
  2. In a saucepan, melt the butter.
  3. Stir in the flour and cook until a golden paste forms.
  4. Whisk in the milk and season with salt and pepper.
  5. Cook until thick and creamy.
  6. Put half the potatoes in greased 2 qt casserole.
  7. Cover half with onion and half the sauce; repeat layers.
  8. Cover and bake about 1 hour.
  9. Uncover and continue baking until top is browned.
  10. Shredded cheese may be added to sauce.

    I have revised this recipe to suit our healthy life style. It is delicious when you substitute one half the butter for olive oil and use skim milk instead of low fat and use Mrs. Dash instead of salt. I also use whole grain white flour instead of the regular flour.
