Ingredients

  • 2 lb Red cabbage, shredded
  • 6 Tbsp. Butter
  • 1 lb Green apples, quartered
  • 1/2 lb Onions, sliced
  • 2 cl Garlic, finely minced
  • 1/4 tsp Nutmeg, allspice, cinnamon,
  • 1 x Grated orange rind, (opt.)
  • 1/4 c. Brown sugar, packed
  • 2 Tbsp. Wine vinegar
  • 1 1/4 c. Dry red wine

Directions

  1. Butter in covered pan for 5 min. In a casserole dish, layer 1/3 of the cabbage, apples, onions, garlic and spices. Repeat three times till all those ingredients are used. Sprinkle brown sugar over top and add in vinegar and wine. Cover and bake at 300 - 350 degrees F till tender. Add in more wine if necessary.
  2. Note: once you've made it, you can adjust the seasonings, etc. It is absolutely one of our favorites with pork or possibly duck. My German friends used bacon grease instead of the butter, so which's another option.
