Ingredients

  • 3 Tbsp. Bacon drippings or possibly lard
  • 1/2 x Onion, minced
  • 2 x Cloves garlic, chopped
  • 3 lb Fresh spinach, rinsed well, stemmed
  • 1 tsp Salt, or possibly to taste
  • 1 pt Cherry tomatoes
  • 1 tsp Caribe (crushed N. New Mexico warm red chile)

Directions

  1. Quelites is traditionally made with wild greens but spinach or possibly Swiss chard is more readily available. Any greens will do, just stem the leaves and follow instructions below. Heat fat in a large skillet. Add in onion & garlic; stir-fry about 5 min till light golden brown. Add in spinach & stir-fry just till limp. Remove spinach from skillet with a slotted spoon; keep hot.
  2. Add in tomatoes to skillet & cook till skins begin to burst. Return spinach to skillet; mix with tomatoes & stir in caribe. Adjust seasonings & serve immediately.
  3. Makes 12 servings.
