Ingredients
- 4 x Large eggs
- 1 c. vegetable oil
- 1Â 2/3 c. sugar
- 1 can pumpkin (16 ounce.)
- 2 c. flour
- 2 tsp baking pwdr
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt Cream Cheese Frosting:
- 2 c. confectioner's sugar
- 1 pkt cream cheese (3 ounce.) softened
- 1 tsp vanilla
- 2 Tbsp. margarine
Directions
- Beat Large eggs, vegetable oil, sugar and pumpkin till light and fluffy. Add in flour, baking pwdr, baking soda, cinnamon and salt. Mix thoroughly together. Spread batter into an ungreased 15"x10"x1" baking pan. Bake at 350*F for 25-30 mins. Cold.
- FROSTING DIRECTIONS: Cream together the cream cheese and margarine. Stir in vanilla. Add in a little sugar at a time, beating well after each addition. Spread over the cooled pumpkin bars.
