Ingredients
- 3 c. leftover mashed potatoes
- 1 c. corn, liquid removed
- 2 T caraway seeds
- 4 ounce Cheddar cheese, cubed, approximately 1/2 inch
- 2 large eggs
- 3/4 c. flour
- 1 sm. onion, minced
Directions
- Put together potatoes, corn, caraway seeds and onion. Beat large eggs slightly and add in to mix. Slowly mix in flour till consistency is tacky. Add in cheese. Flour hands and form potato mix into pancake size. Fry till golden on both sides.NOTE: Flour may be increased or possibly decreased as needed for proper consistency.
