Taste just as great as pecan pie, but made in square pan. It's fresh and made right in your own kitchen. Yummy

  • CRUST: (1pkg sugar cookie mix can be used in place of homemade) To make homemade crust - 1 cup butter softened, 1/2 cup sugar, 1 tablespoon milk, 1 teaspoon vanilla extract, 2 1/4 cups all-purpose flour.
  • FILLING: 3 eggs, 3/4 cup dark corn syrup, 3/4 cup sugar, 1 teaspoon vanilla, 1/4 teaspoon salt, 3 cups chopped pecans.( for a thicker filling double ingredients)

Directions

  1. Crust : in a large bowl cream butter and sugar until light and fluffy. Add milk and vanilla. Gradually add flour and mix well. Press crust mixture on bottom of well greased 13x9 pan coming up one inch on the sides. Bake in preheated 325 degree oven on middle rack for 15 min. Let cool about 10 min before pouring filling into pan.
  2. Pecans filling : Beat eggs in large bowl until fluffy and light on color. Add corn syrup, sugar, vanilla and salt. Beat until well blended. Pour over partially baked crust. Sprinkle evenly with pecans. Bake 25 - 30 minutes on 350 until center is set. Cool completely. Cut in squares and serve with vanilla ice cream or cool whip topping
