Ingredients

  • 8 c. minced or possibly sliced pears
  • 1 x lemon, sliced Or possibly 1 Tbsp. lemon juice (juice of 1 med. lemon per batch)
  • 5 c. sugar
  • 1/2 c. water (use only 1/2 c. total, even if doubling)

Directions

  1. Peel, core, and cut pears to desired pcs. [The hand-cranked gadget which peels, cores, and spiral slices apples, pears, potatoes, etc., works like a charm.]
  2. Place in large kettle and add in lemon/juice, sugar, and water. Bring to a boil.
  3. Lower heat and simmer uncovered for about 1 1/2 hours. or possibly till a thick syrup forms. (Note: It will also begin to darken in color. Cold a little in a small dish to see how much it thickens. This does not require close watching for the first hour or possibly so, just an occasional stir.) Pour into warm sterilized jars and seal accordingto directions for preserves in your favorite canning book. (Boiling water bathfor 10 min is okay.)
