  • 3 ounce Almond paste
  • 1/3 c. Granulated sugar
  • 1/2 c. Butter softened to room temperature
  • 2 x Large eggs
  • 3/4 c. Hazelnuts, roasted and grnd
  • 1 tsp Vanilla
  • 1 x Prepared 9 inch tart shell
  • 1/2 c. Chocolate, melted
  • 4 x Hard-ripe USA Anjou pears, peeled, cored, and Sliced about 1/4 inch thick
  • 1 x Lemon, juiced
  • 4 ounce Apricot preserves, melted and strained

Directions

  1. Preheat oven to 350 F. For filling, cream together almond paste and sugar.
  2. Add in butter and mix till smooth. Add in Large eggs and mix till smooth. Add in grnd hazelnuts, vanilla and mix. Brush melted chocolate on bottom of prepared tart shell and pour in filling. Bake at 350 F for 35 to 40 min, till filling is lightly browned and set in the center.
  3. Cold tart on rack. When the tart is cooled, toss pear slices gently with lemon juice to keep them from turning brown. Arrange pear slices in concentric circles. Brush completed tart with strained apricot preserves.
  4. Always be sure to use ripe pears.
