Ingredients
- 2 c. Peanut butter morsels
- 2 c. Flour
- 3/4 tsp Salt
- 1/4 tsp Baking soda
- 3/4 c. Butter, softened
- 1/2 c. Brown sugar, firmly packed
- 1/3 c. Sugar
- 1 x Egg
- 3/4 tsp Vanilla
- Â Â PEANUT BUTTER FILLING
- 3/4 c. Shredded coconut
- 4 tsp Honey
- 2 tsp Water
- 1/4 tsp Cinnamon
- 1/2 c. Peanut butter morsels
Directions
- Preheat oven to 400 F. In top of doulbe boiler over warm ( not boiling)
- water, heat 1 1/2 c. peanut butter morsels, set aside. In small bowl, combine flour, salt and baking soda, set aside. In large mixing bowl, combine butter, brown sugar, granulated sugar, egg and vanilla, beat at medium speed of electric mixer till creamy. Blend in melted peanut butter morsels. Gradually add in flour mix. Using rounded teaspoonsfuls, shape into 1 inch balls. Place 2 inches apart on ungreased cookie sheet. Make thumbprint in center of each cookie.
- Fill each cookie with 1/4 teaspoonful of Peanut Butter Filling( recipe follows)Bake 5-7 min. Cold 2 min, remove from cookie sheet and cold completely on wire rack. In small bowl, combine coconut, honey, water and cinnamon, mix well. Stir in remaining 1/2 c. unmelted peanut butter morsels. Put inside thumbprint.
- Makesabout 5 dozen.
