Ingredients

  • 1 lb Boneless pork (tenderloin is best) (up to 1-1/2)
  • 1 env taco seasoning mix
  •     Oil, for browning
  • 1 c. Prepared salsa, any brand
  • 4 Tbsp. (heaping) peach preserves

Directions

  1. Cube the pork and place in a bowl. Add in the dry taco seasoning mix, and toss to coat. Heat oil in skillet, and add in cubes. Brown, then drain off fat.
  2. Add in salsa and peach preserves to the skillet. Stir to mix well, and lower heat. Simmer gently for 15 min.
  3. Note: I serve this with rice to utilize the wonderful sauce. If any is left over, it makes a wonderful topper for a baked potato.
