Ingredients

  • 225 gm penne
  • 4 Tbsp. passata or possibly skinned deseeded and liquidised fresh tomatoes
  • 6 Tbsp. double cream
  • 1 Tbsp. vodka
  • 1 x salt and freshly grnd black
  •     pepper
  • 23 tsp caviar
  • 2 tsp minced fresh chives
  •     Bring a large pan of lightly
  •     salted water to the boil and tip in the penne.
  •     Cook according to instructions till al dente.
  •     Drain well and transfer to a hot serving dish.

Directions

  1. While the pasta cooks place passata or possibly liquidised fresh tomatoes and cream in a small pan.
  2. Simmer for 5 min to thicken slightly stirring occasionally.
  3. Draw off the heat let the bubbles subside stir in the vodka and season.
  4. When the pasta is ready bring tomato mix back to the boil and pour over the pasta.
  5. Spoon the caviar on top and sprinkle with chives.
  6. Toss at the table and serve.
  7. If you really cant bear the thought of throwing your caviar into a bowl of pasta replace with 110g of finely diced and deseeded tomatoes for a more everyday concoction.
  8. Serves 2 as a main course (4 as a starter)
  9. A simple yet elegant dish of pasta dressed with a creamy tomato sauce and spiked with vodka. A few tsp. of caviar turns it into something eminently celebratory.
