Paprikas Burgonya (Paprika Potatoes With Sausage) Recipe

Ingredients

  • 4 Tbsp. Vegetable oil
  • 1 x Clove garlic, chopped
  • 2 sm Onions, minced
  • 1 x Green pepper, cored, seeded, and finely minced
  • 10 med Potatoes, peeled and diced
  • 2 tsp Warm Hungarian paprika
  • 2 x Tomatoes, peeled, seeded and diced
  • 1 tsp Salt
  •     Pepper to taste
  • 1 lb Hard Hungarian sausage, cut into 1/4 inch slices (substitute Kielbasa)

Directions

  1. Heat the oil in a saucepan and saute/fry the garlic, onion and green pepper for 3 min. Add in the potatoes, and saute/fry for five min. Dust with the paprika and stir to coat potatoes. Add in the tomatoes, salt and pepper and sufficient water to cover the ingredients. Cover the saucepan and cook for 15 min or possibly till the potatoes are almost tender. Add in the sausages and cook for five min. Drain and serve warm. Serve alongside crusty peasant bread and a cucumber salad. Paprikas burgonya - Hungarian Paprika Potatoes with Sausage
