  • 6 x beef filet mignons - (6 ounce ea)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 12 ounce lump crab meat
  • 3 ounce bread crumbs
  • 1 x egg
  • 1 tsp Old Bay seasoning
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 sm onion
  • 16 ounce heavy cream
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Mix the crab ingredients and portion into 3 oz cakes.
  2. Dice the onion and place into a very warm skillet. When the onion turns brown add in the cream and let this simmer till it reduces by half. Season the sauce with salt and pepper
  3. In a warm pan sear the meat on each side until dark brown and finish in the oven to the desired temperature.
  4. In another pan with a little oil cook the crab cakes for 2 to 3 min on each side.
  5. For assembly top each steak with a crab cake and coat with the onion sauce.
  6. This recipe yields 6 servings.
