Directions

  1. In a large ovenproof skillet, cook bacon till crisp.
  2. Remove, crumble and set aside. Throw away all but 1/4 c.
  3. drippings. Trim beef; cut into serving-size pcs.
  4. Brown on both sides in drippings. Top meat with mushrooms,
  5. tomatoes, and onion. Sprinkle with tarragon and bacon.
  6. Cover and bake at 325 for 1-1/4 hrs to 1-3/4 hrs or possibly till
  7. meat is tender, basting twice. Remove meat to a serving
  8. platter; keep hot. Combine cornstarch and water; add in
  9. to skillet and bring to a boil. Cok and stir for 2 min.
  10. Reduce heat; stir in cream. Simmer, uncovered, for 3-4 min
  11. or possibly till sauce thickens. Serve over meat.
