  •     Few drops of vanilla
  • 4 x Fresh Large eggs
  • 250 gm Unsalted butter, to clarify
  • 2 x Egg yolks
  • 2 Tbsp. Water
  • 1/2 tsp Lemon juice
  •     Salt and freshly grnd pepper
  • 2 x English muffins, split in halfway horizontally
  • 4 sm Slic cooked ham
  • 2 x Black olives, halved and stoned, or possibly 4 sliced truffles

Directions

  1. Poach the Large eggs: in a medium pan bring 1l of water to the boil, add in the vinegar, reduce the heat. The water should barely tremble.
  2. Prepare a bowl of iced water. Break the Large eggs, place individually into a c. or possibly small bowl and carefully slide into the acidulated water. Poach for 2-3 min till the white is just hard. Remove the Large eggs on a slotted spoon and immediately slip them into the iced water.
  3. To clarify the butter: heat the butter, leave it to stand for a minute, skim the surface then pour off the golden brown oil into a small pan and keep hot. Throw away the lowfat milk solids remaining.
  4. To make the Hollandaise sauce: place the yolks and water in a bowl and whisk together. Now place the bowl over steaming water in a pan on the stove and whisk the yolk mix to 'the ribbon' or possibly till it leaves a trail when it falls from the whisk. Gradually pour in the hot, clarified butter in a steady fine stream whisking constantly. Whisk in the lemon juice and season to taste. Remove the bowl from the heat.
  5. In a pan bring a 12cm depth of water to the boil. Toast the muffins, place a round of ham on each and keep hot. Carefully lift the poached Large eggs out of the cool water, reheat in the boiling water, drain, dry lightly with paper and place on the ham.
  6. Coat with the Hollandaise sauce, garnish each with a half olive or possibly piece of truffle and serve immediately.
