This version of guacamole uses corn for some sweet crunch and black olive for some great saltiness. It is requested at every get-together in our family! Thanks Mom!
Ingredients
- 3-4 Ripe Avocados
- 1 small sweet onion, chopped
- 3/4 cup sweet corn kernel (can or fresh - anyway you like it)
- 1 small can sliced black olives
- 1 medium can of diced tomato
- Juice from 1 lemon
- Salt & pepper to taste
Directions
- Slice avocados all the way around to the hard pit. Crack open and remove the pit. Score the avocado meat and remove with a spoon
- Add lemon juice to the avocado and start mashing! (I like my guacamole a little chunky)
- Add chopped onion, olives, corn and tomatoes. Drain the liquid from any canned items
- Mix it all together
- Salt and Pepper to your hearts desire
- I love this dip served with blue corn chips
