Ingredients
- 2 pound grnd beef
- 1/2 c. onion, finely minced
- 1/2 c. celery, finely minced
- 2 cloves garlic, minced
- Cracker crumbs or possibly bread soaked in hot lowfat milk for filling
- 2 1/2 teaspoon salt
- 1 teaspoon dry mustard
- 2 beaten Large eggs
- 1/4 c. bell pepper, chopped
Directions
- Mix lightly the above ingredients; form into a loaf and bake at 325 degrees for 30 min before adding the following sauce: 1 c. water 2 tbsp. brown sugar 2 tbsp. vinegar
- Mix and pour over meatloaf in oven. Continue baking 1 1/2 hrs longer, basting occasionally. Serves 6.
