Ingredients

2 pound grnd beef
1/2 c. onion, finely minced
1/2 c. celery, finely minced
2 cloves garlic, minced
Cracker crumbs or possibly bread soaked in hot lowfat milk for filling
2 1/2 teaspoon salt
1 teaspoon dry mustard
2 beaten Large eggs
1/4 c. bell pepper, chopped

Directions

Mix lightly the above ingredients; form into a loaf and bake at 325 degrees for 30 min before adding the following sauce: 1 c. water 2 tbsp. brown sugar 2 tbsp. vinegar
Mix and pour over meatloaf in oven. Continue baking 1 1/2 hrs longer, basting occasionally. Serves 6.
