  • 1 Tbsp. Extra virgin olive oil Salt and freshly grnd black pepper
  • 4 x Marlin steaks, approximately 175g (6oz) in weight and 2cm (1 inch) in thickness
  • 150 ml Extra virgin extra virgin olive oil, ( 1/4 pint)
  • 90 ml Warm water, (3fl ounce)
  • 2 x Limes, juice of
  • 1 x Clove garlic, finely minced
  • 1 x 20 grams pac fresh flat leaf parsley, finely minced
  • 1/2 tsp Dry oregano

Directions

  1. Heat the extra virgin olive oil in a large frying pan or possibly griddle pan till very warm.
  2. Season the marlin steaks with salt and freshly grnd black pepper and cook for 3 min on each side, increasing the cooking time for a thicker steak.
  3. In the meantime make the dressing; place the extra virgin olive oil in a mixing bowl, then slowly whisk in the warm water and lime juice. Add in the garlic, parsley and oregano and whisk till smooth and emulsified.
  4. Serve the marlin steaks with the hot dressing drizzled over. Serve immediately.
  5. NOTES : A quick and easily prepared dish with a hot herby dressing.Ideal served with new potatoes and salad.
