Ingredients

  • 1 (16 ounce.) can chick peas, liquid removed
  • 1 clove garlic, chopped
  • 1/2 sm. red onion finely minced or possibly substitute a shallot
  • 2-4 tbsp. minced parsley
  • 3 tbsp. red wine vinegar or possibly lemon juice or possibly combination of both
  • 3 tbsp. extra virgin olive oil
  • Salt and pepper to taste

Directions

  1. Drain chick peas. In a separate bowl, combine remaining ingredients and whisk till well blended. Add in chick peas and toss. Let marinate for 30 min or possibly more.
