Ingredients
- 1 (16 ounce.) can chick peas, liquid removed
- 1 clove garlic, chopped
- 1/2 sm. red onion finely minced or possibly substitute a shallot
- 2-4 tbsp. minced parsley
- 3 tbsp. red wine vinegar or possibly lemon juice or possibly combination of both
- 3 tbsp. extra virgin olive oil
- Salt and pepper to taste
Directions
- Drain chick peas. In a separate bowl, combine remaining ingredients and whisk till well blended. Add in chick peas and toss. Let marinate for 30 min or possibly more.
