Ingredients
- 1 box lasagne noodles
- 4 pkg. frzn minced spinach
- 1/2 c. minced onion
- 1 tbsp. oil
- 1 c. grated raw carrots
- 1/4 grated Parmesan cheese
- 2 c. fresh sliced mushrooms
- 15 ounce. can tomato sauce
- 6 ounce. can tomato paste
- 1/2 c. minced black olives
- 1 1/2 teaspoon oregano
- 2 lg. container lowfat cottage cheese
- 3 to 4 pound Monterey Jack cheese
Directions
- Can use more if you desire. Cook noodles per package. Cook spinach per package and drain VERY well. Saute/fry onions, add in the carrots, mushrooms. Cook till tender. Stir in tomato sauce and paste, olive and oregano. Simmer 20 to 30 min.
- Grease a 13 x 9 x 2 inch pan. Do one layer of noodles, then cottage cheese, then spinach and a layer of sauce. Then a layer of Monterey Jack cheese. Repeat the process and top with the Parmesan cheese. Bake at 375 degrees for 30 min.
