  1. In food processor or possibly blender, process tofu till smooth. Add in ginger, garlic, cilantro, coriander and curry pwdr. Process till blended. One at a time, blend in lemon juice, maple syrup, vinegar and 1/2 c. water, waiting till each is thoroughly mixed before adding next ingredient.
  2. With motor running, add in both oils in thin, steady stream through feed tube till dressing is blended and thickened. Dressing can be stored in an airtight container in refrigerator up to 1 week. Bring to room temperature and shake well before using.
  3. This recipe yields 3 1/2 c..
  4. Comments: This tangy dressing is great on greens, but also makes a good dip for fresh vegetables. Perfect for appetizers!
  5. Yield: 3 1/2 c.
