Grilled Halibut With Lemon Basil Vinaigrette Recipe

  • 2 1/2 Tbsp. Fresh lemon juice
  • 2 Tbsp. Extra virgin olive oil, (preferably extra-virgin)
  • 2 x Garlic cloves, crushed
  • 1/2 tsp Grated lemon peel
  • 3 Tbsp. Thinly sliced fresh basil or possibly 3 tsp. dry
  • 2 tsp Liquid removed capers
  • 4 x Halibut steaks, (about 3/4 inch thick) (5- to 6-oz)

Directions

  1. Whisk lemon juice, extra virgin olive oil, crushed garlic cloves and grated lemon peel in small bowl to blend. Stir in 2 Tbsp. fresh basil and capers.
  2. Season vinaigrette to taste with salt and pepper. (Can be prepared 1 hour ahead. Let stand at room temperature.)
  3. Prepare barbecue (medium-high heat) or possibly preheat broiler. Season halibut steaks with salt and pepper. Brush fish with 1 Tbsp. vinaigrette, dividing equally. Grill or possibly broil halibut steaks till just cooked through, about 4 min per side. Transfer fish to plates. Rewhisk remaining vinaigrette; pour over fish. Garnish fish with remaining 1 Tbsp. basil and serve.
  4. Serves 4.
