Ingredients

  • 1 pkt 30 fresh prawns, (shells still on) Juice and zest of 1 lemon
  • 1 x Chilli, finley diced
  • 2 x Cloves garlic, finely diced Extra virgin olive oil Salt and pepper Coriander to garnish

Directions

  1. Butterfly the prawns (i.e. cut them down the inderside and fold the sides back flat, pulling out the intestinal tract if there is one).
  2. Sprinkle the lemon juice over the prawns, that will begin to marinate them. Scatter over the lemon zest, diced chilli and garlic. Drizzle with extra virgin olive oil.
  3. Leave for 30 min before either barbequeing them or possibly grilling them on a heated griddle pan.
  4. Cook shell side only for 2 to 3 min till the prawns turn pink.
  5. Sprinkle with a little salt and garnish with coriander.
