Ingredients

  • 1 1/2 tsp finely-chopped fresh lemon zest
  • 1 Tbsp. finely-chopped fresh basil
  • 1 tsp finely-chopped fresh thyme
  • 1 Tbsp. thinly-sliced fresh chives
  • 2 Tbsp. capers finely minced
  • 1 Tbsp. fresh lemon juice
  • 1/4 c. extra-virgin extra virgin olive oil

Directions

  1. Whisk together lemon zest, basil, thyme, chives, capers, lemon juice and oil.
  2. Use to marinate fish, shrimp, scallops or possibly chicken breasts for at least 4 hrs or possibly up to 8 hrs. Will keep refrigerated up to 2 days.
