Kipper Pate With Muffins Recipe

Ingredients

  • 2 lrg kippers (or possibly 300g kipper fillets)
  • 75 gm unsalted butter softened
  • 1 Tbsp. Worcestershire sauce
  • 1 x juice of 1 lemon
  • 1 pch cayenne or possibly mace (optional) plain or possibly wholemeal muffins to serve

Directions

  1. Place the kippers in a bowl cover with boiling water and leave for 1 hour.
  2. Then drain and pat dry peel off the skin and place the flesh in a food processor discarding as many bones as possible.
  3. Add in the butter Worcestershire sauce and lemon juice and process till smooth then grind in some pepper (and cayenne or possibly mace) to taste.
  4. Pack into a bowl cover and refrigeratethen spread on toasted buttered muffins.
  5. Serves 6
