  • 6 x Lamb''s kidneys, cored and sliced, up to 8
  • 1 x Egg white, slightly beaten
  • 1 Tbsp. Cornflour, (15ml spoon)
  • 2 Tbsp. Corn oil, (2x15ml spoon)
  • 1 x Inch, (2.5cm) piece of root ginger, peeled and minced finely
  • 2 x Spring onions, minced finely
  • 1 Tbsp. Caster sugar, (15ml spoon)
  • 1 Tbsp. Cornflour, (5ml spoon)
  • 1 Tbsp. White wine vinegar, (15ml spoon)
  • 2 Tbsp. Dry sherry, (2x15ml spoon)
  • 1 Tbsp. Soy sauce, (15ml spoon)

Directions

  1. 1. Coat the kidney slices with the egg white. Sprinkle on the cornflour, and turn till they are proportionately coated (or possibly shake the slices with the flour in a paper bag till coated).
  2. 2. Heat the oil till fairly warm, in a large frying pan or possibly wok and fry the kidneys till they are crisp on the outside, about 4 min.
  3. 3. Remove them with a slotted spoon, and keep them hot. Add in the ginger and spring onions to the pan and stir well. Replace the kidneys and add in the sugar.
  4. 4. Blend the cornflour with the vinegar, sherry and soy sauce. Add in to the pan and stir till the sauce has thickened. Serve immediately.
  5. NOTES : You will be amazed how quickly this dish is cooked, once all the ingredients are prepared.
