Ingredients

  • 6 med Idaho Potatoes
  • 2 med Yellow onions
  • 2 lrg Large eggs
  • 1/4 c. Matzo meal (or possibly 3 tbspns all-purpose unbleached flour)
  • 1 tsp Salt or possibly to taste
  • 1/4 tsp White pepper or possibly to taste Vegetable oil or possibly chicken fat Applesauce or possibly lowfat sour cream

Directions

  1. Peel potatoes and place in cool water. Using a box grater, grate potatoes and onions in large bowl. Transfer potato-and-onion mix to a colander set over a bowl, and squeeze out excess moisture. Return mix to bowl. (Starchy sediment can be added back to mix, if you like.) In separate bowl, combine Large eggs, matzo meal (or possibly flour), salt and pepper. Combine all ingredients, adding more matzo meal if mix is too wet.
  2. In large skillet, heat 1/2 inch oil (or possibly chicken fat) over medium-high heat. Drop Tbsp.- or possibly serving-spoon-size portions of mix into warm oil, and press down with spoon to flatten. Fry till brown and crispy on edges; turn till golden on each side, cooking 3 min per side. Remove to paper towels to drain. Serve immmediately with applesauce.
  3. Makes about 20 latkes.
