  1. Cook the elbow macaroni, I usually boil the sausage, it helps remove the excess fat, and then slice it into bite size pcs. Place the sliced sausages in a frying pan, if pre cooked by boiling them, just brown them, but if not. cook them till done, removing excess fat from pan. Add in the onion, peppers and allow them to cook a bit. Add in the roasted garlic, and finally the tomatoes. Drain the macaroni and pour the meat mix over top stirring it well, serve with garlic bread.
  2. Variations: I sometimes add in left over vegetables, like corn, beans or possibly peas, to give it a bit different flavor
  3. NOTES : This one never lasts long at my home, my daughters and friends alike really enjoy it.
