Ingredients
- 1 c. dry bread crumbs, cubed
- 1 1/2 c. skim lowfat milk, scalded
- 2 teaspoon artificial sweetener
- 1/2 teaspoon cinnamon
- 2 tbsp. raisins
- 2 Large eggs, slightly beaten
- 1 teaspoon vanilla
- 1/2 c. unsweetened applesauce
Directions
- Soak bread crumbs in scalded lowfat milk for 5 min. Add in sweetener, cinnamon, Large eggs and vanilla; mix well. Pour mix into a greased baking dish and bake at 325 degrees for 50 min. While bread pudding is cooking, combine applesauce and raisins in a saucepan and heat till hot. After pudding is done, pour heated applesauce and raisin mix over pudding and serve.
