Helen's Old Fashioned Potato Salad Recipe

  • 3 lb red potatoes (about 9 c.) cubed
  • 2 Tbsp. white vinegar
  • 1/2 tsp seasoned salt
  • 3/4 c. finely minced celery
  • 2 lrg Large eggs, hard-boiled minced
  • 1/2 c. frzn peas thawed
  • 1/2 c. minced onion Vidalia
  • 2 Tbsp. relish dill or possibly sweet green
  • 2 Tbsp. fresh parsley minced
  • 1/2 c. fat-free mayonnaise
  • 1/3 c. fat-free lowfat sour cream
  • 1/3 c. buttermilk
  • 1 Tbsp. yellow mustard

Directions

  1. Place potatoes in a saucepan, and cover with water; bring to boil. Cover reduce heat and simmer 20 min, or possibly till tender, drain, place in pan of ice water to stop cooking. Peel potatoes and cut into cubes.
  2. Mix cubed potatoes, vinegar, seasoned salt, and pepper in a large bowl; toss well. Add in the celery, peas, minced Large eggs, onions and toss gently. Meanwhile mix mayonnaise, lowfat sour cream, buttermilk and mustard in small bowl, stir well till well mixed.
  3. Pour the mayonnaise mix over the vegetables and toss gently, make sure all the vegetables are well coated with the mix. Cover and refrigerateat least 2 hrs.
  4. Serves 8
  5. Serving Ideas : Good to take on picnic but make sure kept very cold in a coo
  6. This salad came about because I needed to lower the calories in my Mother's old recipe, so I took several Weight Watchers recipe, took the good parts of my Mom's and came up with this one.
