Ingredients

  • 1 med. potato, unpeeled
  • Peanut butter
  • Approximately 1 to 2 pound 10X sugar (depends on the size of potato)

Directions

  1. Boil potato till soft; then peel and mash. Add in sugar a little at a time till stiff sufficient to roll flat. Spread surface with peanut butter. Roll into a log form. Wrap in waxed paper. Refrigerate till cool sufficient to slice.NOTE: When you start adding the sugar to the potato, the "creates" moisture. Pleas have plenty of 10X sugar on hand to bring it to the right consistency.
