Old Fashioned Potato Salad Recipe

Ingredients

  • 8 med Potatoes, boiled in skins
  • 8 x Large eggs
  • 6 lrg Stalks celery, washed minced medium
  • 1 med Sweet onion diced fine
  • 1/8 c. Sweet relish
  • 2 Tbsp. Juice from relish
  • 1 Tbsp. Yellow mustard
  • 1 Tbsp. Creamy horseradish
  • 1/2 c. Best foods Helmans
  • 1/2 c. Miracle Whip
  • 1/2 c. Dairy lowfat sour cream
  • 1/2 tsp Dill weed
  • 1/2 tsp Celery seed
  • 1 1/2 tsp Salt (or possibly to taste)
  • 1/4 tsp Pepper
  • 1 dsh Paprika, garnish on top

Directions

  1. Cook potatoes App. 25-30 min. Check for doneness, by piercing with fork. Drain, Cold. Peel potatoes, cut into 1/4 in cubes. (small pcs absorb flavor of seasonings easier) Boil 8 Large eggs, hard boil stage app. 15 min. cold and mash 5 Large eggs, reserve 3 for garnish. While potatoes and Large eggs are cooling combine the following 13 ingredients in large mixing bowl, mix together, let stand for at least 15 min, refrigerated.
  2. Add in Potatoes to mix, along with mashed Large eggs toss till all potatoes are coated. Chill at least 2 hrs. Garnish with remaining hard-boiled egg-sliced and sprinkle with Paprika.
  3. Serves 8-10 people.
