Ingredients
- 8 med Potatoes, boiled in skins
- 8 x Large eggs
- 6 lrg Stalks celery, washed minced medium
- 1 med Sweet onion diced fine
- 1/8 c. Sweet relish
- 2 Tbsp. Juice from relish
- 1 Tbsp. Yellow mustard
- 1 Tbsp. Creamy horseradish
- 1/2 c. Best foods Helmans
- 1/2 c. Miracle Whip
- 1/2 c. Dairy lowfat sour cream
- 1/2 tsp Dill weed
- 1/2 tsp Celery seed
- 1Â 1/2 tsp Salt (or possibly to taste)
- 1/4 tsp Pepper
- 1 dsh Paprika, garnish on top
Directions
- Cook potatoes App. 25-30 min. Check for doneness, by piercing with fork. Drain, Cold. Peel potatoes, cut into 1/4 in cubes. (small pcs absorb flavor of seasonings easier) Boil 8 Large eggs, hard boil stage app. 15 min. cold and mash 5 Large eggs, reserve 3 for garnish. While potatoes and Large eggs are cooling combine the following 13 ingredients in large mixing bowl, mix together, let stand for at least 15 min, refrigerated.
- Add in Potatoes to mix, along with mashed Large eggs toss till all potatoes are coated. Chill at least 2 hrs. Garnish with remaining hard-boiled egg-sliced and sprinkle with Paprika.
- Serves 8-10 people.
