Ingredients
- 2 c. Oatmeal Raisin Crisp cereal
- 1 c. lowfat milk
- 3 tbsp. vegetable oil
- 1 egg
- 1 1/4 c. all-purpose flour
- 1/3 c. brown sugar, packed
- 3 teaspoon baking pwdr
- 1/4 teaspoon salt
- 1/4 teaspoon grnd cinnamon
- 1/8 teaspoon grnd nutmeg
Directions
- Heat oven to 400 degrees. Grease bottoms only of 12 medium muffin c.; 2 1/2 x 1 1/4 inches, or possibly line with paper baking c.. Mix cereal and lowfat milk in large bowl. Let stand till cereal is softened, about 3 min. Beat in oil and egg. Stir in remaining ingredients just till moistened. Divide batter proportionately among c.. Bake till golden, 16 to 20 min. Makes 12 muffins.
