Hard Boiled Eggs 3 Ways Recipe

Ingredients

  • Eggs on Ezekiel
  • 1 piece Ezekiel bread (or your favorite whole grain bread)
  • 2 hard boiled eggs, peeled and sliced
  • 1 clove of garlic
  • 1-2 tsp. extra virgin olive oil
  • Handful of watercress or baby spinach
  • Salt and pepper to taste
  • Guacamole Stuffed Eggs
  • 3 hard boiled eggs, peeled
  • 1 small avocado, roughly diced
  • 1 tbsp.of lemon juice
  • 1 small garlic clove, crushed
  • 2 tbsp. chopped scallions
  • Salt and pepper to taste
  • Slice eggs in half and pop out the yokes (You can save the yolks to add to a salad later into day).
  • Scoop avocado into each egg white half and enjoy!
  • Garbanzo + Egg Salad
  • 1-15 ounce can garbanzo beans, drained and rinsed
  • 3 hardboiled eggs, peeled and chopped
  • 1/2 cup diced tomato
  • 2 tbsp. thinly sliced red onion
  • 1 clove minced garlic
  • 2 tsp. olive oil
  • 1 tbsp. red wine vinegar
  • Salt and pepper to taste
