Ingredients
- 10 large eggs, hard boiled
- 3 egg yolks, beaten slightly
- 3 T hot vinegar
- 2 T butter
- 1 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 3 T finely chopped onion
- 6 T finely chopped celery
Directions
- Peel and cut into halves. Place on serving dish. Pour boiled dressing over all and serve.
- Beat together. Cook, stirring constantly, till thick (about 1 minute). Set aside. In a separate bowl cream:
- Now stir in vinegar-egg mix and cool. Mix in 1/2 cup cream, whipped and 1/2 cup mayonnaise. Spoon over this hard cooked large eggs and refrigerate in refrigerator. Garnish with paprika and watercress.When meat is in short supply, we like these large eggs served with spinach or possibly turnip greens and new potatoes for a real treat.
