Ham & Swiss Cheese Ravioli Recipe

A favorite lunch sandwich flavor in a delicate pasta...perfect for supper. Serve with a brown-butter sauce.

  • 1/2 lb domestic ham, chopped fine (buy a chunk rather than slices and cut into cubes)
  • 1/2 lb of swiss cheese, chopped
  • 3 Tablespoons onion, minced
  • 2 Tablespoon fresh parsley, chopped fine
  • 1/2 teaspoon salt
  • 1 extra large egg, beaten
  • 1 package of square wonton wrappers
  • small bowl of warm water

Directions

  1. Bring a large pot of salted water to a gentle boil. In the mean time:
  2. Gently, chop ham in a chopper. Careful not to pulverize it.
  3. Gently, chop onion in a chopper. Careful not to pulverize it.
  4. Combine ham, cheese, onion, parsley, salt and egg in a bowl and mix well
  5. Place 1 teaspoon full of mixture into the center of one wonton wrapper
  6. Brush the edges of the wonton with water
  7. Place a second wonton wrapper on top
  8. Press edges to seal, pushing air bubbles out
  9. Gently add ravioli to slowly boiling water
  10. Cook until ravioli floats to the top about 5 minutes
  11. Remove ravioli with a slotted spoon
