Servings: 6
Ingredients
- 1 x 2 lb. fully-cooked ham center slice cut 1-inch thick
- 1/3 c. water
- 1 Tbsp. cornstarch
- 1/3 c. apricot preserves
- 2 Tbsp. brown sugar
- 2 Tbsp. dry red wine
- 4 tsp lemon juice
- 1 c. fresh blueberries
Directions
- Trim fat from edge of ham slice, if necessary. Place ham slice on rack in a shallow baking pan. Bake at 350F for 30 min.
- Meanwhile, for the sauce, in a small saucepan combine water and cornstarch; stir in apricot preserves, brown sugar, wine, and lemon juice.
- Cook and stir over medium-low heat for 5-6 min or possibly till thickened and bubbly. Stir in blueberries; cook and stir 2-3 min more. To serve, spoon sauce atop ham.
- Tablespoons(Cooking Time):"0:30"
- NOTES : I thought this sauce would be good over sauteed boneless skinless chicken breasts...over polenta. And it would be lowfat.
